Preheat the oven to 170℃.
Separate the egg yolk and egg white carefully.
Pour the egg yolk and sugar into a bowl.
By using medium speed, whisk the egg yolk and 30g of sugar until pale.
Add the sifted 62g lamington mix over egg yolk mixture.
Add the melted butter into the mixture.
Pour the egg white and sugar into another bowl.
Using high speed to whisk the egg white with 30g of sugar is added gradually until light and creamy.
Fold-in ½ of egg white mixture into egg yolk mixture first, and continue with the remaining egg white mixture.
Pour the batter into baking pan and bake at preheated oven for 30 minutes or until it done. Cool and cut into square.
Prepare the icing by mixing together all the ingredients.
Coat the square in icing, and then roll in desiccated coconut to coat.
